Every pony had at least 10 wingpower. If her best fliers were the ones out sick, she could have lost more. Additionally, it showed 6 ponies Xed off, but we only saw 2 pages. Did they say it was only 6 ponies missing?

Since you guys obviously weren't paying attention, 910 wingpower was the record set by Fillydelphia, not 1000. So if the 8 (not 6) sick ponies were stronger than 10 wingpower each on average, then that would more than explain how the total would drop below 800. Also keep in mind that there was only one pony other than Dash to be confirmed to have over 10 wingpower. We don't know for sure how many of the others met that goal. Thunderlane most likely did, since he was already over 9 before training began, but he was one of the sick ones.
The one thing we do know for certain is that Spitfire was a lazy ass.

how was she lazy? she was there to record their wing power it would have been an unfair advantage and I would assume probably disqualified them if she helped make the tornado. so she did her job she was suppose to do not seeing how she was lazy.

Well, if we assume they had enough wingpower before factoring in the sick pegasi to break the record, which is most likely the case based on Dash's reaction, then we can say they had at least 911 wingpower. (Uh.) So in order for 8 pegasi missing to have dropped them to 795 wingpower, the sick pegasi must have had an average wingpower of 14.5, which is quite preposterous, seeing as how Dash's wingpower was 16.5. Not to mention Fluttershy's jump from .5 to 2.3 wingpower was "a huge improvement", which is only an increase of 1.8, which would put Thunder Lane at 11.1, a much more realistic number. And if we use that as an average for the sick pegasi, that hit would only take them down to 822.2, leaving them plenty of leeway.
So, in conclusion, the only possible explanation is that Derpy has a wingpower of 27.2 and was flying the wrong way, bringing their wingpower to the appropriate 795.
On another note, I wonder what Spitfire's wingpower is.
